Brown Spicy Coffee from Acorn: A Rare Mountain Recipe You Should Never Try Alone

Deep in the mountain forest, our elderly grandfather collects white acorns, a rare wild variety used by ancient villagers to make a unique traditional coffee. After bringing them home, he sorts out only the healthy ripe acorns, ferments them, boils them to remove bitterness, peels them to a light brown color, roasts them, grinds them into powder — and finally brews a very unusual acorn coffee. ⚠ Warning: White acorns contain natural tannins and toxins. If they are not processed correctly, they can cause stomach pain, nausea, poisoning, and kidney stress. Only trained villagers know how to detoxify them safely. Please do NOT try this recipe unless you truly understand the process. After the coffee is ready, grandmother lights an outdoor fire, places a large saj pan over the flames, and cooks a rare traditional dish called Saj Ichi — beef fried with tomatoes, potatoes, peppers and spices.
