Everything was cooked in melted lamb fat and sealed in a clay jar. The jar was buried underground to be stored for the winter. During snow and freezing days, we take this meat from the ground. Welcome to Sim Village Cooking! Today we follow a full day of hard work in our large orange orchard. Grandfather climbs through deep rows of trees and fills huge bags with fresh ripe oranges. After the harvest, he presses the oranges inside a long wooden press, and grandmother squeezes the fruit with her boots to extract pure juice. Meanwhile, a giant 7 kg trout is prepared for cooking. The fish is covered in clay, placed on hot coals, and slowly roasted until the clay shell becomes solid. When the clay is cracked open, the trout inside is steaming, soft, and full of aroma. We pour fresh orange juice over the trout, creating a bright glaze and serving it with the orange syrup made earlier. Experience a real autumn day in our remote mountain village of Sim. Grandfather climbs steep forest slopes, surrounded by waterfalls and yellow trees, to harvest 50 kg of wild pomegranates growing on the edge of a cliff. On the way back, he also collects persimmons and a fresh fig straight from the tree. Near a powerful waterfall, he stops at a small mountain lake and catches big wild carp using a basket-style net. One fish almost escapes, but he manages to bring home four large carp. Together with grandmother, they carry the heavy harvest down the narrow forest path. At home they cut the pomegranates, fill a wooden press, and grandmother presses the juice with her feet. Grandfather gathers the pure pomegranate juice into a 10-liter bottle, and grandmother cooks thick doshab syrup. They fry all the carp at once in a one-meter saj pan, pour hot pomegranate juice over the fish, and serve everything beautifully on long wooden trays with onions, pomegranate seeds, whole fruits, and persimmons. Grandpa begins his journey by climbing dangerous narrow cliffs to gather wild medlar — a rare fruit growing only in the rocky highlands. He carries a 40 kg transparent sack filled with medlar on his back, walking through risky trails and sharp mountain edges. At home, Grandma processes the harvest the traditional way: she pours the medlar into a wooden trough and crushes it with rubber boots to release the juice. The leftover pulp is placed into a draining cloth bag and hung from a tree so the medlar juice slowly drips into a big cauldron. They then boil the juice for hours to make medlar doshab, a natural winter remedy made by the mountain villagers for generations. Meanwhile, Grandpa collects wild mountain coriander, and Grandma prepares fresh herb qutab on a saj. In the evening, the elderly couple enjoy a warm family dinner outdoors.
