Homemade noodles and traditional Azerbaijani khangal with meat complete a day of village cooking. Among heavily laden fig branches, we gather ripe fruit to keep as a sweet reserve for the colder months. Back home, the woman kneads dough, cuts homemade arishta noodles and lays them out to dry for future meals. She also prepares traditional khangal with meat — a hearty meal after the harvest. Chapters Sim Village Cooking is a real-life cooking project from a mountain village. Here we cook with firewood, build our own tandoors and clay ovens, and use ingredients we grow ourselves. There is no electricity or gas — just fire, hands, and family. This is not a show or a staged video — this is how we really live.
