Today we follow a full day of hard work in our large orange orchard.
Grandfather climbs through deep rows of trees and fills huge bags with fresh ripe oranges.
After the harvest, he presses the oranges inside a long wooden press, and grandmother squeezes the fruit with her boots to extract pure juice.
Meanwhile, a giant 7 kg trout is prepared for cooking.
The fish is covered in clay, placed on hot coals, and slowly roasted until the clay shell becomes solid.
When the clay is cracked open, the trout inside is steaming, soft, and full of aroma.
We pour fresh orange juice over the trout, creating a bright glaze and serving it with the orange syrup made earlier.
This is real mountain village cooking: nature, fire, hard work, and pure flavors.
